Some may feel squeamish about eating it, but rabbit has a fan base that grows as cooks discover how easy they are to raise — and how good the meat tastes.

Whoever made the black bean brownies with walnuts on top, they were delicious! Can you post the recipe? Also, Margo your eggplant dip was phenomenal!

Spelt Bread
2 1/2 cups water
1 tbsp olive oil
3 cups packed spelt flour
1/2 tsp sea salt
1 tbsp baking powder (normal baking powder has corn starch in it, so you can make baking powder with 1 part baking soda, 2 parts cream of tartar, and 2 parts arrowroot starch)

Mix all ingredients together. Put them in a greased and floured loaf pan. Bake at 375 for 55 minutes, then let cool in the pan for a minimumof a half an hour. Slice, eat and enjoy

you have to pack the spelt flour or else it's not enough and the bread is too doughy. Sorry I forgot to metion before

Sorry for the delay in getting out the recipes. I'm having trouble posting to the forum from my home computer.

I hope you enjoy these!

Cinnamon Cupcakes
1 1/2 cups of brown rice flour
1/2 cup oil (next time I'm going to try applesauce instead< hopefully more moist less greasy)
1 cup Agave nectar
1 1/2 tsps baking soda
1/4 tsp sea salt
1 cup rice milk (we use vanilla)

Mix all ingredients together. Pour into a greased 8" cake pan. Bake at 375 for 30 minutes. Remove from oven let cool. Slice, eat and enjoy!

Frosting
½ cups of vanilla soy milk
¾ dry soy milk powder
1 tbsp coconut flour
¼ agave nectar
1 tbsp vanilla extract
½ cups coconut oil
2 tbsps of lemon juice

Combine everything but oil and lemon juice in food processor for two minutes. With the machine running slowly add the oil and lemon juice, alternating between the two until fully mixed in. Pour into an airtight container and refrigerate for a minimum of six hours.
